Labor Day Softball BBQ/Cookie Recipe

We had over 50 people for a little shin dig at our house for Labor Day. We hosted the Softball Team's end of season BBQ at our house. It was so much fun and a little crazy. We had to pull some W.T. maneuvers but it all worked out. We realized about 30 minutes before that we didn't have a table to put food on. So like any way smart and classy people we found a big board and some Rubbermaid bins and threw a sheet over it and called it a table. Hey, it worked and remarkably it didn't topple over spilling all the food. I think that will be our next investment!

Jam packed back yard. We had so much fun!

I told some friends at the BBQ that I would put my Chocolate Chip Cookie Recipe on my blog so here it is. It is actually my mother-in-law, Carol's, recipe.

Chocolate Chip Cookies

1 c. brown sugar
1/2 c. sugar
2 eggs
1 c. shortening (use Crisco not generic for best results)
1 t. vanilla

Cream together until smooth. Add:

2 1/2 c. flour
1 t. salt
1 1/4 t. baking soda

Mix well. If dough is very sticky and moist, add a little more flour.

Add your favorite chocolate chips. I have also used M&Ms (very yummy).

Roll out into big balls. Bake at 350 for 8-10 minutes. Cookies are done when only the tallest peaks on the cookies are light brown. Do not over-bake. Cool on a cooling rack or wax paper.
